Our Free Range Spatchcock Chicken comes from one of our trusted partner farms in Yorkshire, where birds are slow-grown and truly free to roam. Raised in wide-open pastures and fed a natural, forage-based diet enriched with herbs and locally grown cereals, these chickens develop a wonderful texture and superior flavour the right way — with time, care and proper animal husbandry.

Spatchcocking (also called butterflying) means removing the backbone so the bird opens out flat. This dramatically reduces cooking time and ensures the breast and leg meat cook evenly — no more dry breast while waiting for the legs to catch up. It's the ideal preparation for BBQ cooking and also works brilliantly under the grill or in the oven.
Bring to room temperature for 30 minutes. Season or marinate in advance. Place flat over medium-high coals, skin-side down, for 15 minutes until golden and charred. Flip and cook for a further 20–25 minutes until the thigh reaches 75°C internal. Rest for 10 minutes before carving. The flat shape means everything cooks at the same rate — the key advantage of spatchcocking.
Yes — Our marinades are made fresh in-house at TJB using quality ingredients with no seed oils, artificial flavourings or preservatives. The Garlic and Herb uses EV olive oil, fresh garlic and rosemary. The Piri-Piri uses real red chillies and red bell peppers.
